Some things I love about Summer
There are lots of things I love about summer. Color in our garden is a biggie. I think in some ways I plant things because of the color they are, and not always the taste.
However, there ARE things I plant for the taste. Tomatoes. I don’t even buy them at the store. Every time I bought one in the past, I was so disappointed, so I gave up. But coming from the garden, I can’t get enough. Besides taste, I also plant tomatoes for the color. Years ago, I just planted Roma and a few Brandywine. This year the tomatoes are a menagerie of color. I was planning to have a smaller garden this year, however, 2 of this tomato and 4 of that, etc., managed to equal 40 plants.
This year, one of my favorites is Copia, and another year for Aunt Ruby’s. Copia is an orange/yellow mix (at least mine are) and Aunt Ruby’s is a beautiful green when ripe. These colors make great salsa and add lots of color to your table. If you plant tomatoes, or buy them at a farmer’s market, go for the fun colors!
What is quite amusing after all this talk about tomatoes is that until we planted our own garden about 14 years ago, I did not even like tomatoes.
So, what I have for you today friends, is a new recipe. The only things that didn’t come from the garden is the salt and coconut oil. Have a look at this Summer Squash Medley!! Try it, we all liked it:-)
