Pizza Crust (Summer 2011)
1 C tapioca flour
½ tsp Italian seasoning (or to taste)
1 large egg
1 TBSP Olive Oil
1/8 tsp salt
2 TBSP water
Grease pan. Add all ingredients to a bowl. Mix.
Add a little more water (probably no more than a tablespoon at a time) if the dough is not wet enough to easily spread. It can almost spread itself. It makes a HUGE difference if it is wet enough, and almost impossible to spread if it is too dry. Spread dough on greased cookie sheet or pan in desired shape.
Pre-bake crust at 400 degrees for about 10 minutes, checking regularly. I like to flip it in the middle of baking to have it evenly baked.
After adding your toppings, bake until cheese is melted to your liking.
I usually quadruple the recipe, which makes two big pizzas and we have enough for leftovers the next day for lunch.
