Just about FREE iced tea:-)

I am working on my poetry, can’t you tell?

I am also struggling at the moment with juggling the end of our school year (We will be done in two weeks, and I think I am more excited than the kids!!), the grass growing and needing weekly mowing and the garden in need of tending and planting.  (Not to mention cooking, cleaning, laundry, running the kids around, etc., etc., etc.)  However, amidst this, we have begun to already enjoy a very few items from our garden.

Mint.

Mint can basically take over your yard if you are not careful and afraid to dig it out ruthlessly every two years or less.  But, the kids and I love the tea we make with it.  We have three different types of mint.  I have attempted to contain them by planting them in a large pot (the kind that a tree from the store would come in), and then sinking that pot into the garden with a few inches of the rim above the ground.  This does somewhat keep it restrained, but I still need to pull or dig out mint that has escaped.

One of our favorite things to do with the mint is make iced tea from it.  We only use water, mint stems (with leaves attached), and stevia to sweeten.  It is super easy, very inexpensive, and refreshing.
