Gelatin Fruit Dessert

Do your kids like Jello?  And even if they do, do you not make it because of all the additives?  How can “raspberry” flavor,  in color RED really be good for them?  So for years, my kids would only enjoy Jello on rare occasions elsewhere.  I just could not bring myself to make it for them.

So, now that I know of a way to make it that is no more difficult, we do eat it on a regular basis.  And, you only really need two ingredients!  I believe in the Jello section at the grocery store you may fine plain gelatin.  If not, buy it online.  (it may be called ‘beef gelatin” or just “gelatin.”)

 

4-5 C of Juice (look for all juice or even organic 100% juice)

4 TBSP Gelatin

chopped fresh fruit (optional)

 

Heat juice in pan.  (do NOT boil)  Stir in gelatin with a whisk.  Stir for several minutes to be sure the gelatin has completely dissolved.  Cool until it is thickening a bit, then add your fruits.  Some fruits, like kiwi and fresh pineapple will cause it not to gel)  I have used apples, grapes, and oranges and canned pineapple with success.
