1. Rinse herbs and drain well. Once most of the water has drained off the herbs, place them on a towel to dry them further.
2. After they have dried fairly well, set them on another dry towel on either a cooling rack, cookie sheet, or even a plate. It is important that this towel is dry and not wet, as your herbs will become moldy.
3. Set this on a shelf in your pantry or in a kitchen cabinet. Try to remember to check on it the next day. If the towel is damp, it is best to exchange this with a dry one.
4. At this point, I will often flip the herbs over so that the stems underneath dry out well too.
5. After a few weeks, remove leaves and place in food processor or blender and pulse until desired texture.
5. Store in recycled glass jars! It may be helpful to write the year on the jar, so you use the older herbs up first!
