Crustless Pumpkin Pie

What makes Pumpkin Pie difficult to make?  The crust!  So, if you eliminate that, it make it so very easy, easy and nutritious enough to turn into breakfast.

8 C pumpkin puree

8 large or 7 extra large eggs

1 13.6 oz can full fat coconut milk

1 TBSP cinnamon

1 tsp ginger

1 tsp nutmeg

3/4 tsp ground cloves

1 1/2 tsp salt

1/3 C honey

3 scoops Kal pure stevia (of 1/8 tsp if no scooper)

 

Mix all ingredients with an electric mixer. Fill two 9 x 13 inch glass baking dishes equally.  Bake for about one hour at 350 degrees, until a knife comes out clean.
