There is something about buckwheat and oats that I like. And…almond extract. This is a combination of these into a great cookie!
Cream together in large mixing bowl
1/2 c butter
1/2 c palm shortening
1/4 c sugar, honey or maple syrup
2 tiny scoops pure stevia powder (like Kal)
1 1/2 tsp vanilla
1 1/2 tsp almond extract
In a small bowl mix
3 TBSP psyllium husk
1/4 c water
(OR 1 tsp xanthan gum)
Add this to mixing bowl then add
1 tsp salt
1 tsp baking soda
1 c buckwheat flour
1 c oat flour
1/4 c coconut flour
mix and finally add
1/2 c of tiny chocolate chips (like Enjoy Life brand)
Using a small spoon, place on cookie sheet about an inch apart. Bake about 8 minutes at 350 degrees until slightly brown.
