Chocolate Candy

To a glass bowl or a small pot or double broiler add:

        1 C coconut oil.

Melt over VERY low heat until just melted.

Once melted add:

        1/4 C honey

        1/4 C cocoa powder

        1/8 tsp vanilla (optional)

        dash of salt (optional)

 Stir well. When mixture is completely mixed, remove from heat then add:

        about 1 1/2 – 2 cups of raisins, nuts or seeds of your choice

 

I melt this right on my stovetop (or in the sun on a warm day), on VERY low heat.  Once all is melted and mixed remove from heat.  Move to a cooler spot and stir every ten minutes until it begins to thicken.

Once it becomes a little stiffer, drop on wax paper in candy-sized portions on cookie sheet or large cake pan with a spoon.  Put in freezer until hardened.  Remove from wax paper and store in container in freezer or fridge.

 

NOTE:  when adding raisins or nuts, add enough to really have the liquid be filled.  Stirring is what keeps all the candy sweet. The honey sinks to the bottom, and if you don’t stir, the candy on the top will not be sweet at all!
