This recipe is mostly from my friend Alexis, who got it from The Baby Bistro cookbook. You can use a GF flour mix, but I don’t usually have that on hand, but instead I have a zillion other miscellaneous GF flours. So, you can use your GF flour mix, or try this!
We have this for breakfast, or even lunch. You can mix your dry ingredients the day before, and even have your apples ready in a little lemon juice for a quick, delicious breakfast!
5 or 6 apples cored and sliced (peeling optional)
6 eggs
1/2 C milk (any kind)
1 C plain yogurt (increase milk by 1 C if you don’t have yogurt)
1/3 C sorghum flour
1/3 C tapioca flour
1/3 C oat flour
1/4 C coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1-2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
Begin frying apples in about 4 or so TBSP of butter or coconut oil in a large cast iron pan.
In a large mixing bowl add 6 eggs and mix until foamy. Add the milk, and yogurt and mix. To the top of this mixture, add flours followed by baking soda, baking powder, salt, cinnamon, ginger and nutmeg and mix well.
Once the apples are softened and you have your batter ready, sprinkle some cinnamon, ginger, and nutmeg onto the apples and stir well. Then, pour batter on top of the apples.
Carefully place your HOT cast iron pan in the oven and bake for about 20 minutes at 350 degrees. (You can use a baking dish for this as well, and just cook the apples in a different pan. However, a hot cast iron pan will cook a lot faster in your oven!)
