Garden Tortilla Soup

Add to pot –

2-3 TBSP coconut oil

1 c chopped onion

1-2 chopped peppers (like Anaheim chili, mildly spicy)

2-3 c shredded zucchini

1 c green beans, cut in small pieces

16 oz chopped/crushed tomatoes

 

Simmer for about 15 minutes then add –

16 oz can great northern beans

32 oz chicken broth

1 TBPS chili powder

1 tsp cumin

½ tsp oregano

1 tsp salt

2 c chopped cooked chicken

 

Simmer for about 10 minutes more. Then add –

1 c chopped fresh cilantro (leaves and stems)

 

Take off heat and let sit for a few minutes before serving.  Serve with cheddar cheese and tortilla chips on top.
