Berry Oat Bars (credit for this goes to Janelle)

5 cups oats

1/2 C coconut oil
1/2 C butter
1/3 C honey or maple syrup (optional)
2 small scoops pure stevia powder (like the brand Kal)
1 tsp vanilla
1 tsp salt

5-7+ C frozen or fresh berries
1/4 C arrowroot powder or corn starch

 

Melt butter and coconut oil in a large bowl. Add honey/maple syrup, stevia, vanilla and salt.  Mix well.

Puree 2 cups of oats in blender until it starts to look like flour.

Add 3 cups of oats and oat flour to the butter/coconut oil mixture and mix well.

Press 2/3 of the dough into an oiled 9×13 baking dish. Bake at 375 degrees until slightly brown, about 15 minutes.

Place fruit in large bowl. Stir in the corn starch or arrowroot powder and mix well.

Once crust is baked, remove from oven. Add fruit mixture evenly on top, then add remaining dough evenly. Press slightly.

Bake for about 35-40 minutes at 375 degrees until oats turn golden brown.

 

Note: This bakes faster if your berries are not completely frozen and have thawed somewhat before mixing.  Also, if using strawberries, cut them into smaller pieces.
