Squash Surprise

4 pattypan, smaller zucchini, or other summer squash

2 lbs ground pork or ground turkey

1 tbsp Italian Seasoning

¾ tsp salt

1/3 stick of butter

1 onion

½ cup of milk

½ cup of shredded Parmigiano Reggiano cheese (optional)

 

Brown ground pork or turkey along with Italian seasoning in separate pan until cooked.  While that is cooking chop the onion and begin cooking in a large pot with the butter.  Shred the squash and add to the pot with the onion.  Cook the onion and squash mixture until tender, then add the salt, pork, milk and cheese.  Cook until it is heated and then serve.

There are a few surprises here.  First, the liquid in the squash turns this into a soup.  The second surprise is that this is SO easy and it tastes good, and uses a bunch of squash!!! (It freezes well too.)
