This recipe is a bit different than most in that there is a good bit of pumpkin in it and hardly any sweetener, although it tastes very sweet to us. When I make something, I really like getting the maximum amount of healthy ingredients and still have good flavor! This is so healthy, you could serve it as breakfast!
When I make this, I only use a blender. If you don’t have one, a mixing bowl and hand mixer will do the job! If you don’t have stevia, add a little extra honey, and I’m sure your pie will turn out just fine.
4 eggs
3 C pumpkin
1/2 can (or measure 6 oz) full fat coconut milk (stirred well)
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/3 tsp ground cloves
3/4 tsp salt
1/4 c honey
2 scoops stevia (tiny scoops that come with the pure powdered stevia)
To your blender add the above ingredients. The order doesn’t matter much, but a blender usually works a little better if the bottom has more liquid. Blend until well mixed. Pour into a pie crust like Mary’s Pie Crust (click for the recipe) and bake for about an hour at 350 degrees.
