Refried Beans

1/4 C coconut oil (optional)

2 pints of black or pinto beans (or one of each)

1/2 – 1 C cheddar cheese

1/2 C salsa

1/2 tsp salt

Melt coconut oil in a medium size sauce pan.  Add rinsed beans. Mash if possible with a hand potato masher.  Add cheese, salsa, and salt and stir well.  Heat well and serve.

You can also bake this in the oven in a baking dish at 350 for about 25 minutes, or until bubbly.  Using coconut oil will really help the beans not stick to the pan!
