Add to bowl –
½ C palm shortening
½ C butter
2 eggs
¼ C maple syrup or sugar
2 small scoops of pure stevia powder
2 tsp vanilla
Mix with mixer until creamy then add to top –
1 C brown rice flour
½ C arrowroot powder
1 tsp baking soda
2 TBSP ground chia seed or ½ tsp xanthan gum
1 tsp salt
1 TBSP cinnamon
Mix with mixer again then add to top –
3 C gluten free oats
½ C raisins or chocolate chips
Mix all together. Form into cookie shape mounds and slightly flatten. Bake at 350 degrees about 8 minutes until slightly browned.
